Double Rich Brownies


2 cups semi sweet chocolate chips (or carob chips)
8 tbsp. vegetable oil
2 beaten eggs
1/2 cup honey (or other natural sweetener ie. organic cane sugar)
1 tsp. vanilla
3/4 tsp. baking powder
3/4 cup kamut, amaranth or spelt flour


  1. Heat oil and choc. chips in a pan over low heat until chips are melted. 
  2. In a bowl beat 2 eggs and add in honey and vanilla.  Stir until combined
  3. In a separate bowl mix flour and baking powder.
  4. When cool, add chocolate mixture to eggs and mix well.
  5. Next, add chocolate to dry ingredients and stir until mixed.
  6. Grease a square 8x8 pan and line bottom with parchment paper.
  7. Pour mixture in pan* and bake at 350 degrees for 30-40 minutes until toothpick comes out clean when inserted in middle.  Remove from oven and cool before cutting.


* if desired add carob chips or nuts to mix before pouring in pan.
